Dinner went wonderfully even with everyone running off to a meeting. The portions I used for the curry were perfect for six people. I used the S&B Golden Curry Sauce mild. I got slightly more than a pound of chicken breasts and cut them up into about 1 inch pieces. I decided that the chicken plus the sauce on the rice would be enough. I did not feel like buying onions or anything else to put in the curry. I steamed the rice - about 3-4 cups which translated to six cups when cooked. There was still at least one cup left over. While steaming the rice I steamed pre-cut squash and zucchini. The veggies really needed seasoning or at least parm cheese. I think I should have made more veggies. I bought pre-cut veggies from the produce section of Ukrops. I would have liked carrots and edamane.
The curry sauce was wonderful on it's own with the rice. I think one night I just might make the sauce and freeze it. Very yummy.

6 cooked cups of Nishiki sushi rice
lots of squash and zucchini - never did measure it, the container said it served five

Now I fear I have a lot of homework and it will not all get done. Now I must do as much as possible.
